Zoodle Pizza Casserole

Ingredients

30-32 oz zucchini (~3), spiralized into zoodles

1 ½ tsp salt

2 eggs, lightly beaten

8 oz shredded mozzarella cheese, divided

1/4 cup (28g) Parmesan cheese, grated

1/4 cup (30g) all-purpose flour

2 tbsp (19g) cornmeal

8 oz pizza sauce

1/2 cup (~60g) mushrooms, sliced

1/2 cup (~86g) green pepper, chopped

Directions

Preheat oven to 400°F (200°C). Coat a 3-qt baking dish with cooking spray.

Place zoodles in a colander and sprinkle with the salt; toss gently. Let stand 20 min, then pay dry with paper towels.

In a large bowl, stir together the eggs, 1/2 cup of mozzarella, the Parmesan, flour & cornmeal.

Stir in the zoodles, then transfer to a prepared baking dish. Bake 10 min or until set and no excess liquid remains.

Spread the top with pizza sauce, then top with remaining mozzarella & veggies.

Bake 15-20 min more or until cheese is light brown. Let sit at least 10 min before serving.

Change the toppings to anything desired, like other veggies or cooked meats.
