✤30-32 oz zucchini (~3), spiralized into zoodles
✤1 ½ tsp salt
✤2 eggs, lightly beaten
✤8 oz shredded mozzarella cheese, divided
✤1/4 cup (28g) Parmesan cheese, grated
✤1/4 cup (30g) all-purpose flour
✤2 tbsp (19g) cornmeal
✤8 oz pizza sauce
✤1/2 cup (~60g) mushrooms, sliced
✤1/2 cup (~86g) green pepper, chopped
❖Preheat oven to 400°F (200°C). Coat a 3-qt baking dish with cooking spray.
❖Place zoodles in a colander and sprinkle with the salt; toss gently. Let stand 20 min, then pay dry with paper towels.
❖In a large bowl, stir together the eggs, 1/2 cup of mozzarella, the Parmesan, flour & cornmeal.
❖Stir in the zoodles, then transfer to a prepared baking dish. Bake 10 min or until set and no excess liquid remains.
❖Spread the top with pizza sauce, then top with remaining mozzarella & veggies.
❖Bake 15-20 min more or until cheese is light brown. Let sit at least 10 min before serving.
❖Change the toppings to anything desired, like other veggies or cooked meats.
