✤100g white chocolate
✤300 mL heavy whipping cream
✤1 lime, zested, plus extra for garnish
✤3 large egg whites, room temperature
✤50g caster sugar
✤150g raspberries
✤3 mint sprigs, leaves torn or finely shredded
❖Break the chocolate into small pieces and place in a heat-proof bowl. Place half the cream in a small saucepan and heat until it begins to boil. Pour it immediately over the chocolate and stir until mixture is smooth.
❖In a separate bowl, add the zest & other half of the cream and whisk until it forms soft peaks. Fold this mix into the melted chocolate and set aside.
❖In another bowl, whisk the egg whites until they form soft peaks. Whisk in the sugar 1 tbsp at a time, and continue whisking until mixture is shiny, smooth and has stiff peaks that hold their shape. Carefully fold it into the chocolate mix.
❖Set some raspberries aside for garnish, place the rest with the mint into four 200 mL glasses. Crush the fruit lightly with a fork. Spoon the mousse over the raspberries, garnish with extra berries & zest, and chill at least 2 hours, or overnight.
