White Chocolate Raspberry Lime Mousse

Ingredients

100g white chocolate

300 mL heavy whipping cream

1 lime, zested, plus extra for garnish

3 large egg whites, room temperature

50g caster sugar

150g raspberries

3 mint sprigs, leaves torn or finely shredded

Directions

Break the chocolate into small pieces and place in a heat-proof bowl. Place half the cream in a small saucepan and heat until it begins to boil. Pour it immediately over the chocolate and stir until mixture is smooth.

In a separate bowl, add the zest & other half of the cream and whisk until it forms soft peaks. Fold this mix into the melted chocolate and set aside.

In another bowl, whisk the egg whites until they form soft peaks. Whisk in the sugar 1 tbsp at a time, and continue whisking until mixture is shiny, smooth and has stiff peaks that hold their shape. Carefully fold it into the chocolate mix.

Set some raspberries aside for garnish, place the rest with the mint into four 200 mL glasses. Crush the fruit lightly with a fork. Spoon the mousse over the raspberries, garnish with extra berries & zest, and chill at least 2 hours, or overnight.
