✤1/2 cup (60g) all-purpose flour, sifted
✤1/2 cup (96g) granulated sugar
✤1/4 tsp baking powder
✤1/2 tsp cinnamon
✤Pinch of salt
✤1/2 cup (48g) old fashioned oats
✤1/4 cup unsalted butter, melted
✤2 tbsp milk
✤2 tbsp (42g) honey
✤1 tsp vanilla extract
✤5 oz (~143g) white chocolate, melted
❖Preheat oven to 375°F (190°C). Line 2 baking sheets with parchment or silicone.
❖In a medium bowl, whisk together flour, sugar, baking powder, cinnamon, salt & oats. In a stand mixing bowl, combine the butter, milk, honey & vanilla and mix until smooth. Slowly add in the dry ingredients and mix to combine.
❖Drop 1 level tsp of batter onto sheets, leaving at least 1-inch space in between; you might have to do more than one batch, totaling 40 cookie halves.
❖Bake 7-9 min, then remove from oven and let cookies cool on sheets 3 min. Carefully transfer cookies to wire rack to cool completely.
❖Once cool, apply thin layer of the melted white chocolate on one cookie, then set another on top to sandwich.
