Makes 18
✤1/2 cup (1 stick) unsalted butter, softened
✤1/2 cup (60g) powdered sugar
✤1/4 tsp salt
✤1 tsp vanilla extract
✤1 cup (120g) all-purpose flour, sifted
✤1/2 cup (56g) pecans, finely chopped
❖In a large mixing bowl, cream together the butter, sugar, salt & vanilla until light and fluffy. Add the flour gradually and beat well after each addition. Fold in the pecans gently.
❖Preheat oven to 375°F (190°C).
❖Take a small amount and roll into 18 even sized balls. Place dough balls on an ungreased baking sheet.
❖Sprinkle a little powdered sugar on a plate, dip a fork in it, then press down both ways on the balls in a cross hatch pattern.
❖Bake for 15 minutes, then allow to cool on sheet for 5 minutes before moving to wire rack.
