✤2 cobs of corn, grilled or steamed and shaved off (~240g)
✤10 oz avocado, diced
✤2 cups (~340g) cucumber, diced
✤2 cups (~420g) cherry tomatoes, halved
✤1/4 cup (~67g) red onion, diced
✤1 tbsp high quality olive oil
✤1/4 cup fresh lemon juice
✤1/2 tsp salt, or to taste
✤1/2 tsp black pepper, or to taste
❖Toss all ingredients together in a large serving bowl.
