Ingredients

2 cobs of corn, grilled or steamed and shaved off (~240g)

10 oz avocado, diced

2 cups (~340g) cucumber, diced

2 cups (~420g) cherry tomatoes, halved

1/4 cup (~67g) red onion, diced

1 tbsp high quality olive oil

1/4 cup fresh lemon juice

1/2 tsp salt, or to taste

1/2 tsp black pepper, or to taste

Directions

Toss all ingredients together in a large serving bowl.

Use this as a base to add protein also, like shrimp, chicken or tuna.
