✤1 tbsp olive oil
✤1 large yellow onion, diced (~278g)
✤3 cloves garlic, minced
✤3 bell peppers, diced (~408g)
✤1 ½ lbs lean ground beef or turkey
✤1 tbsp Italian seasoning
✤1 tbsp dried oregano
✤1 tbsp smoked paprika
✤ salt & pepper, to taste
✤2 tbsp balsamic vinegar
✤1- 15 oz can diced tomatoes with juice
✤8 oz tomato sauce
✤2 cups cooked brown rice
✤1/2 cup (56g) shredded cheese of choice
❖Preheat oven to 350°F (177°C).
❖Heat oil in a large oven-proof skillet over medium-high heat. Add the onion, garlic & peppers and sauté about 3-4 minutes.
❖Stir in the meat and continue to cook just until it starts to brown, 6-8 minutes, breaking up the meat as it cooks.
❖Stir in all seasonings, then the balsamic, diced tomatoes, tomato sauce & rice. Sprinkle top with the cheese and transfer skillet to oven.
❖Bake for 15 minutes or until top is nicely golden.
