Unstuffed Bell Pepper Skillet

Ingredients

1 tbsp olive oil

1 large yellow onion, diced (~278g)

3 cloves garlic, minced

3 bell peppers, diced (~408g)

1 ½ lbs lean ground beef or turkey

1 tbsp Italian seasoning

1 tbsp dried oregano

1 tbsp smoked paprika

salt & pepper, to taste

2 tbsp balsamic vinegar

1- 15 oz can diced tomatoes with juice

8 oz tomato sauce

2 cups cooked brown rice

1/2 cup (56g) shredded cheese of choice

Directions

Preheat oven to 350°F (177°C).

Heat oil in a large oven-proof skillet over medium-high heat. Add the onion, garlic & peppers and sauté about 3-4 minutes.

Stir in the meat and continue to cook just until it starts to brown, 6-8 minutes, breaking up the meat as it cooks.

Stir in all seasonings, then the balsamic, diced tomatoes, tomato sauce & rice. Sprinkle top with the cheese and transfer skillet to oven.

Bake for 15 minutes or until top is nicely golden.
