✤2 cups (200g) rolled oats
✤1/4 cup (30g) shredded, unsweetened coconut
✤1 egg, room temperature
✤1 ½ cups almond milk
✤1 tbsp coconut oil, melted
✤1/2 cup (~100g) mango, chopped
✤1/2 cup (~100g) pineapple, chopped
✤1 tbsp (21g) honey
✤1/2 tsp cinnamon
✤1/2 tsp ground ginger
✤Pinch of salt
❖Preheat oven to 400°F (200°C) and lightly grease an 8x8-inch baking dish or ramekin.
❖Mix all ingredients together in a large bowl until thoroughly combined.
❖Pour batter into baking dish and bake for 25-30 minutes, or until top is golden brown.
