Thai Peanut Mango Salad

Ingredients

7 oz butter lettuce, chopped

1 red bell pepper, thinly sliced then halved (~80g)

3 ripe mangoes, diced (~460g)

1/2 cup (~48g) green onion, thinly sliced

1/3 cup (40g) roasted peanuts, chopped

1-2 jalapeños, seeds removed, finely chopped

For the dressing:

1/4 cup (64g) creamy peanut butter

1/4 cup lime juice

1 tbsp tamari or soy sauce

1 tbsp (21g) honey

1 tsp sesame oil

2 cloves garlic, minced

Pinch of red pepper flakes

Directions

In a large serving bowl, combine all salad ingredients.

In a separate medium bowl, whisk together all dressing ingredients.

Drizzle dressing over salad and toss to combine.
