

✤1/2 cup (1 stick) unsalted butter
✤1½ cups (~114g) fresh mushrooms, sliced
✤3 green onions, sliced (~20g)
✤2 cups (360g) uncooked long grain brown rice
✤1 clove garlic, minced
✤1½ cups (168g) pecan halves, toasted
✤1/2 tsp salt
✤1/2 tsp thyme
✤1/2 tsp pepper
✤1/2 tsp cumin
✤3- 10.5oz cans condensed beef consommé, undiluted
✤2¼ cups water
✤5 strips bacon, cooked and crumbled
❖Preheat oven to 400°F (200°C).
❖In a Dutch oven, heat butter over med-high heat. Add mushrooms & green onions; cook and stir until tender, 3-5 min. Add rice & garlic; cook and stir 3 min.
❖ Stir in the pecans, salt, thyme, pepper & cumin. Add consommé & water; bring to a boil.
❖Place in oven and bake, covered, until liquid is absorbed and rice is tender, 1-1¼ hours.
❖Transfer to a serving bowl and top with the bacon.
