Texas Pecan Rice

Ingredients

1/2 cup (1 stick) unsalted butter

1½ cups (~114g) fresh mushrooms, sliced

3 green onions, sliced (~20g)

2 cups (360g) uncooked long grain brown rice

1 clove garlic, minced

1½ cups (168g) pecan halves, toasted

1/2 tsp salt

1/2 tsp thyme

1/2 tsp pepper

1/2 tsp cumin

3- 10.5oz cans condensed beef consommé, undiluted

2¼ cups water

5 strips bacon, cooked and crumbled

Directions

Preheat oven to 400°F (200°C).

In a Dutch oven, heat butter over med-high heat. Add mushrooms & green onions; cook and stir until tender, 3-5 min. Add rice & garlic; cook and stir 3 min.

 Stir in the pecans, salt, thyme, pepper & cumin. Add consommé & water; bring to a boil.

Place in oven and bake, covered, until liquid is absorbed and rice is tender, 1-1¼ hours.

Transfer to a serving bowl and top with the bacon.
