

✤1/2 cup water
✤1/2 cup (136g) soy sauce
✤1/2 cup (96g) sugar
✤2 tbsp mirin
✤1 clove garlic, minced
✤1 tsp cornstarch
✤1/2 tsp grated fresh ginger
✤28 oz extra firm tofu, sliced crosswise into 3/4-in slabs
✤2 scallions, green parts only, sliced thin (~24g)
✤ Lime wedges
❖Adjust oven rack to middle position and heat oven to 350°F (177°C).
❖In a small saucepan, whisk the water, soy sauce, sugar, mirin, garlic, cornstarch & ginger together until smooth. Bring sauce to a boil over med-high heat, then reduce heat to med-low and simmer vigorously until sauce is thickened and reduced to 3/4 cup, about 12-15 min.
❖Arrange tofu in an even layer in a 13x9-in baking dish and pour sauce evenly over top. Cover with foil and bake about 30 min, flipping tofu halfway through.
❖Transfer tofu to a platter. Season sauce with black pepper to taste, pour over tofu, and sprinkle with scallions. Serve with lime wedges.
