

✤1 cup (~169g) strawberries, cut into small pieces
✤1 cup (120g)
✤1 cup (112g) whole wheat flour
✤1/4 cup (48g) + 1 tsp (4g) sugar
✤1/4 tsp salt
✤1 tbsp baking powder
✤1/4 cup (half stick) frozen butter
✤3/4 cup buttermilk
✤1 tsp vanilla extract
❖Preheat oven to 400°F (200°C). Line a baking sheet with parchment or silicone.
❖Measure out the 1/4 cup sugar, remove 1 tbsp, and mix that 1 tbsp sugar in a bowl with the strawberries; set aside.
❖In a large bowl, mix together all dry ingredients including remaining 3 tbsp sugar. Using large holes of a cheese grater, grate the frozen butter into the dry mix and stir well.
❖In a separate bowl, whisk together the buttermilk & vanilla. Using a fork, slowly stir in the wet mix into the dry until all mix is just moistened; do not over mix! Gently fold in strawberries.
❖Drop 8 equal large spoonfuls onto prepared baking sheet; do not press or compact them. Sprinkle tops with the 1 tsp sugar.
❖Bake in center of oven for 18 min.
❖Remove and let cool at least 5 min before eating.
