Strawberry Scones

Ingredients

1 cup (~169g) strawberries, cut into small pieces

1 cup (120g)

1 cup (112g) whole wheat flour

1/4 cup (48g) + 1 tsp (4g) sugar

1/4 tsp salt

1 tbsp baking powder

1/4 cup (half stick) frozen butter

3/4 cup buttermilk

1 tsp vanilla extract

Directions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment or silicone.

Measure out the 1/4 cup sugar, remove 1 tbsp, and mix that 1 tbsp sugar in a bowl with the strawberries; set aside.

In a large bowl, mix together all dry ingredients including remaining 3 tbsp sugar. Using large holes of a cheese grater, grate the frozen butter into the dry mix and stir well.

In a separate bowl, whisk together the buttermilk & vanilla. Using a fork, slowly stir in the wet mix into the dry until all mix is just moistened; do not over mix! Gently fold in strawberries.

Drop 8 equal large spoonfuls onto prepared baking sheet; do not press or compact them. Sprinkle tops with the 1 tsp sugar.

Bake in center of oven for 18 min.

Remove and let cool at least 5 min before eating.
