✤1 ½ cups (180g) all-purpose flour
✤1 cup oat flour
✤1 tsp baking soda
✤1/4 tsp salt
✤3 eggs, room temperature
✤1/3 cup maple syrup
✤150g strawberry Greek yogurt
✤1 tsp vanilla extract
✤1/2 tsp almond extract
✤1 tbsp unsalted butter, melted
✤1 ¼ cups (~200g) fresh strawberries, diced
For the optional glaze:
✤1/3 cup (64g) powdered sugar
✤1 tbsp strawberry jam/preserves
✤1-2 tbsp lemon juice
❖Preheat oven to 350°F (177°C) and line a loaf pan with parchment.
❖In a large bowl, whisk together the dry ingredients. In a separate large bowl, whisk together the wet ingredients until smooth.
❖Add the dry to the wet and mix until just combined. Toss the strawberries in 1 tbsp flour, then fold gently into the batter.
❖Pour batter into loaf pan and bake 35-45 min, or until tester comes out clean.
❖Allow to cool in pan for 10 min before transferring to wire rack. Cool completely before adding glaze.
❖In a small bowl, whisk together glaze ingredients until smooth. Pour over cooled bread.
