Strawberry Bread

Ingredients

1 ½ cups (180g) all-purpose flour

1 cup oat flour

1 tsp baking soda

1/4 tsp salt

3 eggs, room temperature

1/3 cup maple syrup

150g strawberry Greek yogurt

1 tsp vanilla extract

1/2 tsp almond extract

1 tbsp unsalted butter, melted

1 ¼ cups (~200g) fresh strawberries, diced

For the optional glaze:

1/3 cup (64g) powdered sugar

1 tbsp strawberry jam/preserves

1-2 tbsp lemon juice

Directions

Preheat oven to 350°F (177°C) and line a loaf pan with parchment.

In a large bowl, whisk together the dry ingredients. In a separate large bowl, whisk together the wet ingredients until smooth.

Add the dry to the wet and mix until just combined. Toss the strawberries in 1 tbsp flour, then fold gently into the batter.

Pour batter into loaf pan and bake 35-45 min, or until tester comes out clean.

Allow to cool in pan for 10 min before transferring to wire rack. Cool completely before adding glaze.

In a small bowl, whisk together glaze ingredients until smooth. Pour over cooled bread.
