Sourdough Buttermilk Biscuits

350g cake flour

85g bubbly, active sourdough starter

300g buttermilk

1 tsp baking soda

Pinch of salt

Directions

In a large bowl, mix together all ingredients gently until it just comes together.

Preheat oven to 425°F (220°C). Line a baking tray with parchment or silicone.

Turn the mix out onto a floured surface and spread the dough out until it’s a layer about 2cm thick. Use a 5-6 cm round cookie cutter to cut out the biscuits. Push the cutter directly downwards and remove directly upwards; do NOT twist it to cut the dough, otherwise you lose the edging and the rise. Place each round evenly on the baking tray, 12 total.

Bake 16-18 min, until nicely browned. Remove and place on wire rack to cool.
