Smoked Salmon Quinoa Salad

Ingredients

1/2 cup cooked quinoa, cooled

1- 14 oz can red beans, drained and rinsed

1/2 red onion, chopped (~85g)

10 cherry tomatoes, halved (~100g)

8 radishes, sliced (~200g)

2 oz baby spinach

5 oz smoked salmon, sliced

2 tbsp sesame oil

1 tsp soy sauce

1 tsp balsamic vinegar

1 clove garlic, minced

salt & pepper, to taste

Directions

In a small bowl, whisk together the oil, soy sauce, balsamic & garlic.

In a large serving bowl, combine all ingredients and dressing and stir to combine.
