✤3 large carrots, peeled & chopped (~440g)
✤1 large yellow onion, diced (~274g)
✤1 green bell pepper, seeded & diced (~127g)
✤4 large potatoes, peeled & chopped (~1129g)
✤16 oz fresh or frozen corn
✤2 cups vegetable broth
✤1- 12 oz can light coconut milk
✤1 tsp cumin
✤1 tsp garlic powder
✤1/2 tsp dried thyme
✤ salt & pepper, to taste
❖Combine all ingredients into a slow cooker. Cook on high for 5 hours or low for 7-8 hours, until vegetables are softened.
❖Using a potato masher, roughly mash the soup; this will make it really creamy leaving chunky bits.
