Slow Cooked Pork w/ Smashed Sweet Potatoes

Ingredients

2 tbsp soy sauce or tamari

1/4 tsp red pepper flakes

1.5 lbs sweet potatoes, peeled and cut into 1-in cubes

1 cup (~150g) onion, coarsely chopped

1- 8 oz can crushed pineapple, undrained

1 pork loin filet (1-1.5 lbs)

salt & pepper, to taste

2 tbsp butter

Directions

In a small bowl, mix together the soy sauce & red pepper flakes; cover and set aside.

Coat the inside of a slow cooker with cooking spray.

In the pot, combine the potatoes & onion, then pour the pineapple and its juice over top. Place the pork loin on top and sprinkle with salt & pepper. Cover and cook on low for 7 hours or high for 4 hours.

Remove pork and set aside a few minutes to rest.

Add the butter to the slow cooker. Using a potato masher, mash until well blended.

Slice or coarsely shred the pork and return it to the pot. Stir in the soy sauce mix.
