✤2 tbsp soy sauce or tamari
✤1/4 tsp red pepper flakes
✤1.5 lbs sweet potatoes, peeled and cut into 1-in cubes
✤1 cup (~150g) onion, coarsely chopped
✤1- 8 oz can crushed pineapple, undrained
✤1 pork loin filet (1-1.5 lbs)
✤ salt & pepper, to taste
✤2 tbsp butter
❖In a small bowl, mix together the soy sauce & red pepper flakes; cover and set aside.
❖Coat the inside of a slow cooker with cooking spray.
❖In the pot, combine the potatoes & onion, then pour the pineapple and its juice over top. Place the pork loin on top and sprinkle with salt & pepper. Cover and cook on low for 7 hours or high for 4 hours.
❖Remove pork and set aside a few minutes to rest.
❖Add the butter to the slow cooker. Using a potato masher, mash until well blended.
❖Slice or coarsely shred the pork and return it to the pot. Stir in the soy sauce mix.
