✤8 oz wheat bread, cut into 1-inch cubes
✤12 oz turkey breakfast sausage, casings removed as necessary (pork is good too!)
✤2 cups almond milk
✤4 oz (112g) sharp cheddar cheese, shredded
✤10 large eggs
✤1/2 cup (~46g) green onions, chopped
✤1 cup mushrooms, sliced
✤1 tsp paprika
✤1 tsp salt, or to taste
✤1 tsp pepper, or to taste
✤2 tbsp (14g) Parmesan cheese, grated
❖Preheat oven to 400°F (200°C). Arrange bread cubes on a baking sheet and bake 8 min or until toasted.
❖Heat a skillet over med-high heat, then add the sausage and cook for 7 min or until browned, stirring to crumble.
❖In a large bowl, whisk together the milk, cheese, eggs, spices & Parmesan. Add the bread, sausage, green onions & mushrooms, mixing well to coat the bread.
❖Spoon mixture into a 9x13-inch baking dish, cover and refrigerate 8 hours or overnight.
❖Preheat oven to 350°F (177°C), uncover casserole and bake for 50 min or until set and slightly browned.
