Rhubarb & Goat Cheese Tart

Ingredients

1 basic pie or tart dough, at least 10 inches

1 cup plain Greek yogurt

8 oz goat cheese, at room temperature

2 eggs, room temperature

1 tbsp honey

1 tsp orange zest

pinch of salt

pinch of thyme (to taste)

2 rhubarb stalks, julienned

3/4 cup (144g) sugar

1/4 cup orange juice

pinch of cardamom (to taste)

1/4 cup water

Directions

Partially blind bake your crust according to directions using a 9-inch pie or tart pan.

For the filling, combine in a large mixing bowl the yogurt, goat cheese, eggs, honey, zest, salt & thyme. Using an electric mixer on medium, beat until smooth.

Pour into the pie shell and bake about 30 minutes or until crust is golden brown. Let cool.

In a medium saucepan, combine the sugar, orange juice, cardamom & water and bring to a brisk simmer for a couple minutes until sugar dissolves. Reduce heat to low, add rhubarb and cook for 2 minutes. Let stand for 5-10 minutes to cool. Strain the rhubarb from the syrup and arrange on top of the tart.
