✤1 basic pie or tart dough, at least 10 inches
✤1 cup plain Greek yogurt
✤8 oz goat cheese, at room temperature
✤2 eggs, room temperature
✤1 tbsp honey
✤1 tsp orange zest
✤ pinch of salt
✤ pinch of thyme (to taste)
✤2 rhubarb stalks, julienned
✤3/4 cup (144g) sugar
✤1/4 cup orange juice
✤ pinch of cardamom (to taste)
✤1/4 cup water
❖Partially blind bake your crust according to directions using a 9-inch pie or tart pan.
❖For the filling, combine in a large mixing bowl the yogurt, goat cheese, eggs, honey, zest, salt & thyme. Using an electric mixer on medium, beat until smooth.
❖Pour into the pie shell and bake about 30 minutes or until crust is golden brown. Let cool.
❖In a medium saucepan, combine the sugar, orange juice, cardamom & water and bring to a brisk simmer for a couple minutes until sugar dissolves. Reduce heat to low, add rhubarb and cook for 2 minutes. Let stand for 5-10 minutes to cool. Strain the rhubarb from the syrup and arrange on top of the tart.
