Quinoa Salad w/ Kale, Cranberries & Mint

Ingredients

1 cup (180g) quinoa, rinsed and drained

1 cup (~50g) kale, chopped

1/3 cup (54g) dried cranberries

1/3 cup fresh mint leaves, finely chopped

2 tbsp olive oil

1 large lemon, juiced

1 tsp lemon zest

2 green onions, thinly sliced

Directions

Cook quinoa according to package directions. Fluff with fork and set aside to cool.

Once cooled, in a large serving bowl, combine the quinoa with the rest of the ingredients and mix well. Serve chilled.
