✤1 cup (180g) quinoa, rinsed and drained
✤1 cup (~50g) kale, chopped
✤1/3 cup (54g) dried cranberries
✤1/3 cup fresh mint leaves, finely chopped
✤2 tbsp olive oil
✤1 large lemon, juiced
✤1 tsp lemon zest
✤2 green onions, thinly sliced
❖Cook quinoa according to package directions. Fluff with fork and set aside to cool.
❖Once cooled, in a large serving bowl, combine the quinoa with the rest of the ingredients and mix well. Serve chilled.
