Makes 14
✤1 cup (180g) uncooked quinoa
✤2 cups water
✤4 eggs, lightly beaten
✤1/3 cup (~75g) parmesan cheese, grated
✤3 large green onions, sliced thin (~45g)
✤3 cloves garlic, minced
✤1 cup steamed spinach, chopped
✤1 cup (112g) plain breadcrumbs
✤1 tsp olive oil
❖Rinse the quinoa thoroughly and place in a medium saucepan with the 2 cups of water. Bring to a boil, reduce to a simmer and cook about 20 min, until quinoa is tender and has absorbed the liquid. Let it cool.
❖In a large bowl, mix together the quinoa, eggs, cheese, green onion, garlic, salt, spinach & breadcrumbs. Let everything sit for a few minutes to absorb the liquid; batter should be moist, but not runny.
❖Form 14 equal sized patties.
❖Heat the oil in a large non-stick skillet over medium heat. Cook the patties covered for 8-10 min on each side, or until browned. You may have to cook in multiple batches.
