✤1/3 cup unsalted butter, melted
✤1/3 cup (112g) honey
✤1 orange, zested
✤1/2 cup fresh squeezed orange juice
✤1/2 cup (~113g) plain Greek yogurt
✤2 large eggs, room temperature
✤1 tsp vanilla extract
✤1/2 tsp almond extract
✤1 cup (112g) whole wheat flour
✤1 cup (120g) all-purpose flour
✤1 tsp baking powder
✤1/2 tsp baking soda
✤1/4 tsp salt
✤1 tbsp poppy seeds
✤1/2 cup (60g) pistachios, chopped (or more for garnish)
❖Preheat oven to 350°F (177°C). Line a loaf pan with parchment and grease lightly.
❖In a large bowl, whisk together butter, honey & zest until smooth. Whisk in the juice & yogurt, then whisk in eggs & extracts.
❖In a separate bowl, whisk together all dry ingredients except for nuts. Add the dry mix to the wet and stir until just combined. Gently fold in the pistachios.
❖Pour batter into loaf pan and spread out evenly. Bake 45-55 min, until tester comes out clean.
❖Garnish with optional nuts or a glaze of 1/2 cup powdered sugar, 1 tbsp orange juice & 1 tsp zest.
