✤2 ¼ cups (270g) all-purpose flour
✤1 cup (192g) brown sugar
✤2 tsp baking powder
✤1/2 tsp baking soda
✤1 tsp cinnamon
✤1/2 - 1 tsp ground nutmeg
✤1/2 tsp salt
✤1 egg, room temperature
✤1 cup milk (almond milk works good)
✤1 cup (112g) pecans, chopped
❖Preheat oven to 350°F (177°C) and grease a loaf pan.
❖In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda & spices. In a separate bowl, whisk together the egg & milk until smooth.
❖Pour the wet into the dry mixture and stir until just moistened. Make sure not to over-mix! Fold in the pecans, then pour the mixture into the loaf pan.
❖Bake for 50-60 minutes, until a skewer inserted into the center comes out clean. Cool in pan for a short time before removing and cooling on a wire rack.
