✤1 tbsp coconut oil, melted
✤2 large eggs, room temperature
✤1/2 cup (168g) honey
✤1½ cups almond milk
✤1/4 cup (64g) creamy peanut butter
✤3 cups (288g) rolled oats
✤2 tsp baking powder
✤2 tsp vanilla extract
✤1 tsp cinnamon
✤1/4 tsp salt
❖Preheat oven to 350°F (177°C) and lightly grease an 8x10-inch baking dish.
❖In a large bowl, whisk together the melted oil, eggs, honey, milk & peanut butter. Stir in the oats, baking powder, vanilla, cinnamon & salt until well combined.
❖Pour mixture into baking dish and bake 30-40 min. Keep an eye on the last few minutes to prevent burning. Oatmeal is done when just set in the middle.
❖Let cool for a few min before serving.
