✤3 tbsp olive oil
✤1½ tbsp lemon juice
✤1/4 tsp salt
✤1/4 tsp black pepper
✤1 lb ripe but slightly firm peaches, quartered and pitted, each quarter cut into 4 slices
✤12 oz fresh mozzarella, balls halved and sliced ¼-inch thick
✤6 large fresh basil and/or mint leaves, torn into small pieces
❖In a large bowl, whisk together the oil, lemon juice, salt & pepper. Add the peaches and toss gently to coat.
❖On a serving platter, shingle the peaches and mozzarella. Drizzle any remaining dressing from bowl over top. Sprinkle with the herbs and season with salt & pepper to taste. Serve immediately.
