✤1/2 tbsp olive oil
✤1 lb lean ground turkey
✤1 cup (~70g) green onions, chopped & divided
✤2 cups (~194g) riced cauliflower
✤ cumin, chili powder, garlic, smoked paprika & salt, all to taste
✤1 cup tomato sauce
✤15 oz (425g) black beans, cooked
✤1 cup (~144g) corn
✤1 cup (113g) colby jack cheese
For the Topping:
✤1- 14.5 oz can petite diced tomatoes
✤ lime juice, to taste
✤ salt, to taste
❖Preheat oven to 425°F (220°C).
❖Warm a large non-stick skillet over medium-high heat. Add the oil to the pan, swirl to coat, then add the turkey & half of the green onions. Cook until turkey is mostly done, stirring to crumble, about 4 minutes.
❖Stir in the riced cauliflower & all spices, then cook another 3-4 minutes, or until cauliflower is tender. Stir in the tomato sauce and cook until thickened, about 1-2 minutes.
❖Lightly grease a casserole dish, then spoon turkey mixture into dish. Top evenly with the beans & corn, then sprinkle the top with the cheese.
❖Bake for about 15 minutes, until bubbly around edges.
❖Meanwhile, combine remaining half green onions, tomatoes, lime juice & salt in a small bowl. Spoon over casserole just before serving.
