✤1 lb broccoli florets, cut into bite-sized pieces
✤1 tbsp olive oil
✤ salt, to taste
✤1/2 cup (56g) Parmesan cheese, grated
✤2 tbsp aged/thick balsamic vinegar
✤1 lemon, zested
✤Pinch of red pepper flakes
❖Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment or silicone.
❖Toss the broccoli with the oil until completely coated. Arrange in an even layer across the sheet, then sprinkle lightly with salt.
❖Bake for 15 minutes, then remove from oven. Stir the broccoli, then rearrange in single layer again.
❖Sprinkle over the parmesan and place back in oven. Bake 10 minutes or until florets are turning deep golden on edges and cheese is bubbly.
❖Remove from oven and top with the balsamic, lemon zest & red pepper flakes.
❖Store leftovers in refrigerator for a couple days.
