Parmesan Roasted Broccoli w/ Balsamic

Ingredients

1 lb broccoli florets, cut into bite-sized pieces

1 tbsp olive oil

salt, to taste

1/2 cup (56g) Parmesan cheese, grated

2 tbsp aged/thick balsamic vinegar

1 lemon, zested

Pinch of red pepper flakes

Directions

Preheat oven to 400°F (200°C) and line a rimmed baking sheet with parchment or silicone.

Toss the broccoli with the oil until completely coated. Arrange in an even layer across the sheet, then sprinkle lightly with salt.

Bake for 15 minutes, then remove from oven. Stir the broccoli, then rearrange in single layer again.

Sprinkle over the parmesan and place back in oven. Bake 10 minutes or until florets are turning deep golden on edges and cheese is bubbly.

Remove from oven and top with the balsamic, lemon zest & red pepper flakes.

Store leftovers in refrigerator for a couple days.
