✤4- 6 oz salmon filets (~24 oz total)
✤1 tbsp (15g) Dijon mustard
✤ salt & pepper, to taste
✤3/4 cup (~34g) panko breadcrumbs
✤1 tsp minced garlic
✤2 tbsp chopped fresh parsley
✤1 tbsp chopped fresh dill
✤1 tbsp chopped fresh thyme
✤1 lemon, zested
✤2 tbsp olive oil
❖Preheat oven to 400°F (200°C).
❖Line a baking sheet with parchment paper and place the salmon skin side down.
❖Pat dry and season with salt & pepper. Brush the tops of the salmon with the mustard.
❖In a medium bowl, mix together the panko, garlic, herbs & zest. Add the oil and stir until crumbs are evenly coated. Top the salmon with the crumb mixture, pressing gently to adhere.
❖Bake 15-18 min or until inside is cooked and flaky.
