Panko & Herb Crusted Salmon

Ingredients

4- 6 oz salmon filets (~24 oz total)

1 tbsp (15g) Dijon mustard

salt & pepper, to taste

3/4 cup (~34g) panko breadcrumbs

1 tsp minced garlic

2 tbsp chopped fresh parsley

1 tbsp chopped fresh dill

1 tbsp chopped fresh thyme

1 lemon, zested

2 tbsp olive oil

Directions

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper and place the salmon skin side down.

Pat dry and season with salt & pepper. Brush the tops of the salmon with the mustard.

In a medium bowl, mix together the panko, garlic, herbs & zest. Add the oil and stir until crumbs are evenly coated. Top the salmon with the crumb mixture, pressing gently to adhere.

Bake 15-18 min or until inside is cooked and flaky.
