✤1½ tbsp olive oil, divided
✤1½ lbs (four 6 oz filets) fresh cod
✤ salt & pepper, to taste
✤3 cloves garlic, minced
✤1/2 tsp red pepper flakes
✤2 roma tomatoes, diced
✤1 pint cherry tomatoes, halved
✤1 cup tomato pureé
✤1/4 cup dry white wine
✤1/2 cup fresh basil leaves, finely chopped
✤2 tbsp fresh lemon juice
✤1 tsp lemon zest
❖In a large skillet over medium-high, heat the 1 tbsp oil. Season the cod with salt & pepper, then add filets to the pan and cook for 2-3 minutes each side, without moving them, until lightly golden. Remove from heat and set aside.
❖In same skillet, heat the 1/2 tbsp oil. Add the garlic and sauté until fragrant, about 1 minute.
❖Add red pepper flakes, tomatoes, pureé, wine, and a bit more salt & pepper. Bring to a boil, then reduce heat to low, cover and let cook about 8 minutes, stirring occasionally, until mixture forms a thick sauce.
❖Add in basil, lemon juice & zest, and cook 2 more minutes. Return cod to pan and serve.
