Overnight Oat Pie

Ingredients

5 cups (500g) rolled oats

1/3 cup (65g) chia seeds

5 cups almond milk

1 ½ tbsp vanilla extract

Pinch of salt

2 cups yogurt of choice

3 cups fruit of choice

Directions

In a large bowl, add the oats, chia, milk, vanilla & salt and thoroughly stir to combine.

Pour into a 9x13-inch baking or serving dish, using a spatula to create a smooth, even layer. Chill in refrigerator at least one hour to thicken.

Once set, top with an even layer of the yogurt, then an even layer of fruit.

Cover with plastic wrap and refrigerate overnight. Serve cold; keeps in refrigerator up to 3 days.
