Oatmeal Raisin Shortbread Cookies

Ingredients

1/2 cup (1 stick) unsalted butter, softened

1/2 cup (96g) granulated sugar

1/2 tsp Nord spices mix (1½ tbsp ground cardamom, 3/4 tsp cinnamon, 1/4 tsp ground mace/nutmeg, 1/4 tsp ground clove, 1/8 tsp ground grains of paradise (or black pepper)

1/2 cup (48g) rolled oats

1/2 cup (80g) raisins

1 cup (120g) all-purpose flour

Directions

In a large bowl, cream together the butter & sugar, then add the spices, oats & raisins. Begin adding the flour, mixing until you have a consistency just shy of too crumbly.

Form into a disc with your hands, wrap in plastic wrap and chill in refrigerator for 45 min.

Preheat oven to 350°F.

When dough is done chilling, remove from plastic and form into 12 evenly sized discs. Place on a baking sheet and bake about 12-15 min, until edges are just turning golden.

Remove from oven, let stand on sheet 5 min, then move to wire rack to cool completely.
