✤1 tbsp olive oil
✤1 ½ lbs ground turkey
✤1 large yellow onion, diced
✤2 large carrots, peeled & chopped
✤3 cloves garlic, minced
✤1 tsp cinnamon
✤1 tsp paprika
✤1 tsp cumin
✤1/2 tsp cayenne
✤ salt & pepper, to taste
✤1 tsp sugar
✤1 lb sweet potato, peeled & chopped
✤1- 14 oz can chickpeas, drained & rinsed
✤1- 14 oz jar of peeled, crushed tomatoes with juice
✤6 cups chicken broth
✤5 oz baby spinach
❖In a large stock pot, heat the oil over medium heat, then add the turkey and cook until browned.
❖Add the onion, carrot & garlic and sauté for 3 minutes, until onion becomes translucent. Stir in all spices & sugar, then add the potato, chickpeas, tomatoes & broth. Bring to a rapid boil, then reduce heat to low.
❖Simmer, covered, for 25-30 minutes, stirring occasionally, until potatoes are tender.
❖Stir in the spinach and mix for a minute off heat to wilt.
