Moroccan Turkey Soup

Ingredients

1 tbsp olive oil

1 ½ lbs ground turkey

1 large yellow onion, diced

2 large carrots, peeled & chopped

3 cloves garlic, minced

1 tsp cinnamon

1 tsp paprika

1 tsp cumin

1/2 tsp cayenne

salt & pepper, to taste

1 tsp sugar

1 lb sweet potato, peeled & chopped

1- 14 oz can chickpeas, drained & rinsed

1- 14 oz jar of peeled, crushed tomatoes with juice

6 cups chicken broth

5 oz baby spinach

Directions

In a large stock pot, heat the oil over medium heat, then add the turkey and cook until browned.

Add the onion, carrot & garlic and sauté for 3 minutes, until onion becomes translucent. Stir in all spices & sugar, then add the potato, chickpeas, tomatoes & broth. Bring to a rapid boil, then reduce heat to low.

Simmer, covered, for 25-30 minutes, stirring occasionally, until potatoes are tender.

Stir in the spinach and mix for a minute off heat to wilt.
