✤1 cup (52g) wheat bran
✤1½ cups (168g) whole wheat flour
✤1 tsp baking powder
✤1 tsp baking soda
✤1/4 cup (~30g) nuts of choice, chopped
✤3/4 cup applesauce
✤1 cup unsweetened almond milk
✤1/2 cup molasses
✤2 tbsp vegetable oil
✤2 eggs, room temperature, beaten
❖Preheat oven to 400°F (200°C) and grease a 12-count muffin pan.
❖In a large bowl, whisk bran, flour, baking powder & baking soda. Stir in the nuts.
❖In a separate bowl, whisk together the applesauce, almond milk, molasses, oil & eggs.
❖Add the wet ingredients to the dry and stir until just moistened.
❖Divide batter evenly among muffin cups. Bake 15-20 min, or until toothpick test comes out with a couple dry crumbs.
