Molasses Bran Muffins

Ingredients

1 cup (52g) wheat bran

1½ cups (168g) whole wheat flour

1 tsp baking powder

1 tsp baking soda

1/4 cup (~30g) nuts of choice, chopped

3/4 cup applesauce

1 cup unsweetened almond milk

1/2 cup molasses

2 tbsp vegetable oil

2 eggs, room temperature, beaten

Directions

Preheat oven to 400°F (200°C) and grease a 12-count muffin pan.

In a large bowl, whisk bran, flour, baking powder & baking soda. Stir in the nuts.

In a separate bowl, whisk together the applesauce, almond milk, molasses, oil & eggs.

Add the wet ingredients to the dry and stir until just moistened.

Divide batter evenly among muffin cups. Bake 15-20 min, or until toothpick test comes out with a couple dry crumbs.
