

✤1 cup (~267g) mango
✤1 cup (120g) all-purpose flour
✤1 cup (112g) whole wheat flour
✤1/2 cup (96g) sugar
✤1 tsp baking soda
✤1/2 tsp salt
✤1/4 tsp cinnamon
✤1/4 cup (28g) walnuts, chopped
✤1/4 cup (30g) unsweetened coconut flakes
✤1 large egg, room temperature & beaten
✤2 tbsp unsalted butter, melted
❖Preheat oven to 325°F (165°C) and grease a loaf pan.
❖Pureé the mango in a blender until smooth.
❖In a large bowl, whisk together the flours, sugar, baking soda, salt & cinnamon. Add the nuts & coconut and mix well to combine.
❖In a med bowl, whisk together the egg, melted butter & mango pureé. Add the wet to the dry and stir until just blended.
❖Pour batter into loaf pan and bake 40-50 min or until toothpick test comes out clean.
❖Cool for 10 min in pan, then turn out and cool entirely on wire rack.
