Mango Nut Bread

Ingredients

1 cup (~267g) mango

1 cup (120g) all-purpose flour

1 cup (112g) whole wheat flour

1/2 cup (96g) sugar

1 tsp baking soda

1/2 tsp salt

1/4 tsp cinnamon

1/4 cup (28g) walnuts, chopped

1/4 cup (30g) unsweetened coconut flakes

1 large egg, room temperature & beaten

2 tbsp unsalted butter, melted

Directions

Preheat oven to 325°F (165°C) and grease a loaf pan.

Pureé the mango in a blender until smooth.

In a large bowl, whisk together the flours, sugar, baking soda, salt & cinnamon. Add the nuts & coconut and mix well to combine.

In a med bowl, whisk together the egg, melted butter & mango pureé. Add the wet to the dry and stir until just blended.

Pour batter into loaf pan and bake 40-50 min or until toothpick test comes out clean.

Cool for 10 min in pan, then turn out and cool entirely on wire rack.
