Makes 16
✤4 oz (1 stick) unsalted butter, softened
✤50g caster sugar
✤1 ¼ cups (150g) self rising flour
✤2 limes, finely grated
❖Preheat oven to 356°F (180°C) and lightly grease two baking sheets.
❖In a large mixing bowl, cream together the butter & sugar until lightened, fluffy and creamy. Add the flour & lime zest, then mix until a dough is formed.
❖Roll the dough into 16 balls (about 18-20g each) and place on prepared baking sheets. Use a skewer or toothpick to create a lattice pattern in the top.
❖Bake for 12-15 minutes or until just beginning to turn golden. Cool for 5 minutes on the baking sheet, then transfer to wire rack to cool completely.
