Liángbàn Dòufǔ (涼拌豆腐 - Spicy Cold Tofu)

Ingredients

2 tbsp soy sauce or tamari

1 tbsp sesame oil

1½ tsp white rice vinegar

1 tsp (4g) sugar

1 tsp minced fresh ginger

1 clove garlic, minced

1 Thai chile or serrano, sliced thin (~14g)

1 scallion, sliced thin, white & green parts separated

14 oz silken tofu, chilled

1 tsp sesame seeds

Directions

In a medium bowl, whisk together the soy sauce, oil, vinegar, sugar, ginger & garlic, until sugar has dissolved. Stir in the chile & scallion whites.

Slice tofu crosswise into slabs or cut into 1-inch pieces.

Arrange tofu on serving platter, spoon dressing over, and sprinkle with the sesame seeds and scallion greens.
