✤2 tbsp soy sauce or tamari
✤1 tbsp sesame oil
✤1½ tsp white rice vinegar
✤1 tsp (4g) sugar
✤1 tsp minced fresh ginger
✤1 clove garlic, minced
✤1 Thai chile or serrano, sliced thin (~14g)
✤1 scallion, sliced thin, white & green parts separated
✤14 oz silken tofu, chilled
✤1 tsp sesame seeds
❖In a medium bowl, whisk together the soy sauce, oil, vinegar, sugar, ginger & garlic, until sugar has dissolved. Stir in the chile & scallion whites.
❖Slice tofu crosswise into slabs or cut into 1-inch pieces.
❖Arrange tofu on serving platter, spoon dressing over, and sprinkle with the sesame seeds and scallion greens.
