Makes 24
✤2 ¼ cups (270g) all-purpose flour
✤1/2 tsp baking powder
✤1/2 tsp baking soda
✤1/2 tsp salt
✤6 oz (1 ½ sticks) butter, softened
✤1 cup (192g) granulated sugar
✤1 egg, room temperature
✤1 tsp vanilla extract
✤1 lemon, zested
✤3 tbsp fresh lemon juice
❖Preheat oven to 375°F (190°C) and line 2 baking sheets with parchment.
❖In a medium bowl, mix together the flour, baking powder, baking soda & salt.
❖In a separate large bowl, cream together the butter & sugar until well combined, then mix in the egg. Add in the vanilla, lemon juice & zest and mix well.
❖Add the dry ingredients to the wet and mix until combined. Scoop 24 even dough balls and place 2 inches apart on baking sheets.
❖Bake about 12 minutes or until edges are just golden. Let cool on baking sheet for 5 minutes, then move to cooling rack.
