

✤1/4 cup balsamic vinegar
✤2 tbsp olive oil
✤5 oz spring mix
✤2 tbsp lemon zest
✤3 oz parmesan cheese, grated
✤1/3 cup (40g) pine nuts, lightly toasted
✤7 oz cooked chicken breast, cut into bite-sized pieces
❖In a small bowl, whisk together the balsamic & oil until emulsified.
❖In a large serving bowl, combine all ingredients and mix well.
