Lemon Chicken Spring Salad

Ingredients

1/4 cup balsamic vinegar

2 tbsp olive oil

5 oz spring mix

2 tbsp lemon zest

3 oz parmesan cheese, grated

1/3 cup (40g) pine nuts, lightly toasted

7 oz cooked chicken breast, cut into bite-sized pieces

Directions

In a small bowl, whisk together the balsamic & oil until emulsified.

In a large serving bowl, combine all ingredients and mix well.

Top with dressing.
