✤1 ½ cups (180g) oat flour
✤1/2 cup (60g) whole wheat flour
✤1/2 cup (60g) all-purpose flour
✤1 tsp baking powder
✤1 tsp baking soda
✤1/2 tsp cinnamon
✤Pinch of salt
✤3 tbsp (39g) chia seeds
✤2 eggs, room temperature
✤2 ½ tbsp lemon zest
✤6 tbsp fresh lemon juice
✤1 tbsp vegetable oil
✤1/2 cup (126g) unsweetened applesauce
✤1/4 cup (84g) honey
✤1 cup almond milk
❖Preheat oven to 350°F (177°C) and grease a 12-count muffin pan.
❖In a medium bowl, stir together all dry ingredients. In a separate large bowl, whisk together all wet ingredients.
❖Add the dry to the wet and stir until just moistened.
❖Distribute batter evenly amongst the muffin cups. Bake for about 20 minutes, or until toothpick test comes out clean.
