Lemon Chia Seed Muffins

Ingredients

1 ½ cups (180g) oat flour

1/2 cup (60g) whole wheat flour

1/2 cup (60g) all-purpose flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp cinnamon

Pinch of salt

3 tbsp (39g) chia seeds

2 eggs, room temperature

2 ½ tbsp lemon zest

6 tbsp fresh lemon juice

1 tbsp vegetable oil

1/2 cup (126g) unsweetened applesauce

1/4 cup (84g) honey

1 cup almond milk

Directions

Preheat oven to 350°F (177°C) and grease a 12-count muffin pan.

In a medium bowl, stir together all dry ingredients. In a separate large bowl, whisk together all wet ingredients.

Add the dry to the wet and stir until just moistened.

Distribute batter evenly amongst the muffin cups. Bake for about 20 minutes, or until toothpick test comes out clean.
