Makes 20
✤6 oz (1 ½ sticks) unsalted butter, softened
✤1 ½ tbsp culinary lavender (or to taste)
✤4 oz (100g) caster sugar
✤8 oz (225g) all-purpose flour
✤1 oz (25g) brown sugar
❖Lightly grease 2-3 large baking trays or use a silicone mat.
❖In a large mixing bowl, beat together the butter & lavender. Beat in the caster sugar until light and fluffy. Stir in the flour, bringing the mixture together with your hands and kneading lightly until smooth.
❖Divide the mixture in half and roll out to form 2 ‘sausage’ shapes, 6-inches long. Roll the ‘sausages’ in the brown sugar until evenly coated. Wrap in parchment paper or foil and chill until firm.
❖Preheat oven to 320°F (160°C). Cut each roll into about 10 slices and place on the baking sheets, allowing a little room for them to spread.
❖Bake for 15-20 minutes, until they are pale golden brown at the edges.
❖Lift them off the trays with a palette knife as necessary and cool on wire rack.
