Kielbasa & Vegetable Stew

Ingredients

10 oz kielbasa, cut into 1½-inch slices

1 small onion, cut into 8 wedges (~300g)

2 cloves garlic, minced

1 large carrot, cut into 1-inch pieces (~178g)

8 oz red potatoes, quartered

2 cups (~200g) chopped white cabbage

1 cup chicken stock

1 tsp salt

1/2 tsp black pepper

1/2 tsp caraway seeds

1/2 tsp smoked paprika

1/2 tsp thyme

2 tbsp (30g) whole grain mustard

1/4 cup chopped fresh parsley

Directions

In the inner pot of an instant pot, add the kielbasa, onion, garlic, carrots, potatoes & cabbage and stir gently.

In a medium bowl, stir together the chicken stock, salt, pepper, caraway seeds, smoked paprika, thyme & mustard. Pour this liquid over the meat & veg.

Lock lid into place. Select Pressure Cook, adjust pressure to High and time to 4 min.

After cooking, quick release the pressure. Unlock lid and stir in the parsley.
