Jalapeño Popper Stuffed Chicken

Ingredients

2 skinless, boneless chicken breasts (~1-1 ½ lbs)

salt & pepper

3 oz (84g) light cream cheese, softened

1/4 cup (28g) shredded mozzarella cheese

1/4 cup (28g) shredded cheddar cheese

1 clove garlic, minced

3 jalapeños, thinly sliced

Directions

Preheat oven to 400°F (200°C).

Make 5 slits in each chicken breast, being careful not to cut through completely. Transfer the chicken to a baking sheet and season all over with salt & pepper.

In a large bowl, stir together the cream cheese, mozzarella, cheddar, garlic, salt & pepper. Stuff each slit with sliced jalapeños & cream cheese mix.

Bake about 25 minutes, or until chicken is cooked through and no longer pink.
