Italian Sausage Frittata

Ingredients

1/2 tbsp olive oil

1 onion, thinly sliced (~300g)

350g Italian sausage

8 eggs

1/3 cup fresh parsley, finely chopped

50g Parmesan cheese, finely grated

8 oz mozzarella cheese ball, sliced

salt & pepper, to taste

Directions

Heat a large oven-proof frying pan over medium heat. Add the oil and gently sauté the onion with a pinch of salt, until soft and lightly caramelizing.

Remove sausage meat from its casing. Once onions are cooked, crumble the sausage into the pan, breaking it into small chunks. Fry over medium heat until cooked through and browned.

In a large bowl, beat the eggs and season with salt & pepper. Add the parsley and half of the Parmesan cheese.

Pour this mixture over the meat, mix well and cook over med-low heat for 5-7 min, or until frittata is almost set.

Preheat the broiler.

Arrange the mozzarella on top in a single layer and sprinkle with remaining Parmesan.

Place pan under broiler 3-5 min, or until totally set and cheese is bubbly and lightly browned. Cool 10 min before slicing.
