✤1/2 tbsp olive oil
✤1 onion, thinly sliced (~300g)
✤350g Italian sausage
✤8 eggs
✤1/3 cup fresh parsley, finely chopped
✤50g Parmesan cheese, finely grated
✤8 oz mozzarella cheese ball, sliced
✤ salt & pepper, to taste
❖Heat a large oven-proof frying pan over medium heat. Add the oil and gently sauté the onion with a pinch of salt, until soft and lightly caramelizing.
❖Remove sausage meat from its casing. Once onions are cooked, crumble the sausage into the pan, breaking it into small chunks. Fry over medium heat until cooked through and browned.
❖In a large bowl, beat the eggs and season with salt & pepper. Add the parsley and half of the Parmesan cheese.
❖Pour this mixture over the meat, mix well and cook over med-low heat for 5-7 min, or until frittata is almost set.
❖Preheat the broiler.
❖Arrange the mozzarella on top in a single layer and sprinkle with remaining Parmesan.
❖Place pan under broiler 3-5 min, or until totally set and cheese is bubbly and lightly browned. Cool 10 min before slicing.
