Iced Fairy Cakes

Ingredients

4 oz (1 stick) butter, softened

4 oz (100g) caster sugar

2 eggs, room temperature

4 oz (100g) self-rising flour

1 level tsp baking powder

(For flavored cake: add in grated rind or extract)

For the icing:

8 oz (225g) powdered sugar

2-3 tbsp warm water (or juice/extract if flavored)

Directions

Preheat oven to 390°F (198°C) and grease a 12-count bun or muffin tin.

Measure all cake ingredients into a large bowl and beat for about 2 minutes until well-blended and smooth. Fill each tin hole evenly with the mixture.

Bake for about 15-20 minutes, until the cakes are well risen and golden brown. Cool completely on wire rack.

For the icing, add powdered sugar to a large bowl and gradually blend in the water/liquid until you have a fairly stiff icing. Spoon over the tops of the cooled cakes.
