✤1/2 tbsp olive oil
✤1 small onion, minced (~210g)
✤1 clove garlic, minced
✤1/4 cup parsley, minced
✤1/2 lb lean ground turkey
✤1/2 lb lean ground beef
✤1 large egg
✤1/4 cup seasoned breadcrumbs or panko
✤1/2 tsp salt
✤1/2 tsp allspice
✤1/4 tsp black pepper
✤2 cups beef broth
✤3 oz (84g) low-fat cream cheese, softened
❖In a large non-stick skillet or cast iron, heat the oil over medium heat. Add the onions & garlic and sauté about 4-5 minutes, until onions are translucent. Add the parsley and cook another 2-3 minutes, then set aside to cool.
❖In a large bowl, combine the meats, egg, breadcrumbs, seasonings & onion mixture. Mix well with clean hands and form into 16 even-sized balls.
❖Add the beef stock to the pan and bring to a boil. Reduce heat to medium-low and slowly add meatballs to broth. Cover and cook 20 minutes, until cooked through, then remove and set aside.
❖Strain the broth into a sauce pot, add the cream cheese and blend using an immersion blender until smooth.
❖Return the sauce to the skillet, along with the meatballs, and simmer until warm throughout.
