Healthy Meatloaf

Ingredients

2/3 cup almond milk

3 egg whites

2 cups soft, whole wheat bread crumbs

2 green onions, thinly sliced

1 tbsp Worcestershire sauce

1 tsp oregano

1/2 tsp salt

1/4 tsp pepper

1 ½ lbs lean ground beef (90%+)

1/4 cup (68g) ketchup

1 tbsp balsamic vinegar

1 clove garlic, minced

Directions

Preheat oven to 350°F (177°C). Line a 2 qt rectangular baking dish with foil.

In a large bowl, combine the milk & eggs. Stir in the breadcrumbs, green onion, Worcestershire sauce, oregano, salt & pepper. Add the ground beef and mix well together using your hands.

Shape meat into an 8x5 inch rectangle and place in baking dish. Bake 50 min.

In a small bowl, combine the ketchup, balsamic vinegar & garlic. Spread over the top of the meatloaf and bake another 10 min or until meat is done.

Let stand 10 min before serving.
