Healthy Fruit Custard Pie

Ingredients

1 pie crust, premade

2 ½ cups fruit of choice

1/2 cup (120g) low-fat sour cream

2 egg whites, room temperature

1/2 cup (96g) white sugar

3 tbsp (~22g) all-purpose flour

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp vanilla extract

Directions

Preheat oven to 450°F (230°C) and spray/grease a pie dish with unflavored oil.

Press pie crust into dish gently. Sprinkle fruit evenly onto the crust.

In a large bowl, whisk together all other ingredients well. Pour the mixture over the fruit, then cover crust edges with foil or crust shields.

Bake for 10 minutes, then turn heat down to 350°F (177°C) and bake for 30 minutes, or until center is set.
