✤4 large cobs of corn (~450g shaved)
✤2 tbsp (30g) light mayo
✤2 tbsp (~29g) fat-free Greek yogurt
✤1/2 tsp chili powder, or to taste
✤2 tbsp fresh lime juice
✤1 tbsp fresh cilantro, minced
✤2 tbsp (~19g) green onion, minced
✤1/2 cup (60g) cotija cheese, grated
❖Boil corn for 3-5 min, then remove from water to cool. Once cooled, shave corn off cob.
❖In a large bowl, whisk together the mayo, yogurt, chili powder & lime juice. Stir in the corn, cilantro, green onion & cotija.
