✤2 tsp butter
✤1/2 cup (~86g) shallots, minced
✤1 clove garlic, minced
✤2 tbsp (15g) flour
✤1½ cups milk (almond)
✤2 tbsp (14g) parmesan cheese
✤1/4 tsp nutmeg
✤ salt & pepper, to taste
✤4.4 oz light cream cheese
✤16 oz spinach, chopped
❖In a large sauté pan, melt the butter over medium heat. Add the shallots & garlic and cook about 5 min.
❖Add the flour, mix well and cook 1 more min.
❖Reduce heat to low and slowly add the milk, whisking well. Add the parmesan, nutmeg, salt & pepper, mixing well. Add the cream cheese and mix until smooth.
❖Add the spinach and combine well with sauce, cooking a few min until heated through and slightly reduced. Taste and adjust seasonings as necessary.
