Healthy Coconut Banana Bread

Ingredients

1¾ cups (210g) all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

3 large ripe bananas, mashed (~435g)

1/2 cup (60g) + 2 tbsp (15g) unsweetened coconut flakes

2 tbsp coconut oil, melted

1 tsp vanilla extract

1/2 cup (96g) light brown sugar

3 large egg whites

2 tbsp almond milk, unsweetened

1/4 cup (~57g) fat free plain greek yogurt

1/4 cup orange juice

Directions

Preheat oven to 350°F (177°C) and grease a loaf pan.

In a large bowl, mix flour, baking powder & baking soda.

In a separate bowl, whisk together bananas, sugar & vanilla. Add egg whites and mix until smooth. Next mix in the oil.

Then, slowly add in flour mix and combine until moist. Whisk in the almond milk, yogurt & orange juice. Fold in the 1/2 cup coconut flakes.

Pour batter into loaf pan and sprinkle the 2 tbsp coconut on top. Bake 50-60 min or until bread is golden brown and toothpick tester comes out clean.

Cool in pan 10 min, then turn out onto wire rack and cool completely.
