✤2 cups (240g) oat flour
✤1 tsp baking powder
✤1 tsp baking soda
✤1 tsp cinnamon
✤1 tsp ground ginger
✤Pinch of salt
✤2 tbsp vegetable oil
✤1 egg, room temperature
✤1 egg white
✤2 tsp vanilla extract
✤1/3 cup (84g) honey
✤1/2 cup almond milk
✤1/2 cup plain non-fat Greek yogurt
✤3/4 cup (~102g) apple, chopped
✤3/4 cup (~114g) peaches, chopped
❖Preheat oven to 350°F (177°C) and grease a loaf pan.
❖In a large bowl, whisk together the flour, baking powder, baking soda, salt & spices. In a separate bowl, whisk together all wet ingredients, except the fruit.
❖Add the wet ingredients to the dry and whisk together until smooth. Fold in apples & peaches gently until mixed throughout.
❖Bake 40-45 minutes, until golden brown and skewer test comes out clean.
