Healthy Apple Peach Bread

Ingredients

2 cups (240g) oat flour

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1 tsp ground ginger

Pinch of salt

2 tbsp vegetable oil

1 egg, room temperature

1 egg white

2 tsp vanilla extract

1/3 cup (84g) honey

1/2 cup almond milk

1/2 cup plain non-fat Greek yogurt

3/4 cup (~102g) apple, chopped

3/4 cup (~114g) peaches, chopped

Directions

Preheat oven to 350°F (177°C) and grease a loaf pan.

In a large bowl, whisk together the flour, baking powder, baking soda, salt & spices. In a separate bowl, whisk together all wet ingredients, except the fruit.

Add the wet ingredients to the dry and whisk together until smooth. Fold in apples & peaches gently until mixed throughout.

Bake 40-45 minutes, until golden brown and skewer test comes out clean.
